In 2005 we completed a new building to house our new winery. For 5 years we have carefully monitored our test plot of grapes, where we are growing Chardonnay, Merlot, Cabernet, Pinot Gris and Pinot Noir in order to pick other varieties to take into commercial production. We doubled our plantings of Riesling in the spring of 2005 and will double it again with ground already prepared for Riesling planting in the spring of 2007. With any luck, Black Canyon will be producing a fine Pinot Noir within a few years. We are also doubling our plantings of Riesling vines in 2005. We are committed to producing the finest winegrapes in Colorado, and firmly believe the adage that fine wine is made first in the vineyard.
We are exploring other options to use the excellent stone fruits produced in our orchards and in the immediate area, and may produce a peach or pear brandy in the near future as well. Our vineyards are essentially organic, and we are in the process of moving toward receipt of formal “organic” status in the next few years. We are committed to sustainable methods of agriculture whenever possible, and are moving our entire operation in that direction.
